Meet The Derby Farms TX Team

Jack and Beth Derby

Jack and Beth Derby were married in 2012. We have 7 kids between us and soon to be 6 grandkids! Jack retired in 2024, and together we decided to form Derby Farms Sweets and Eats.

Jack prepares the produce, freeze-dries, packages, and labels product. Beth has two other businesses she tends to during the week, along with assorted assistance to Jack, and we both work together at weekend markets.

Jack loves hunting and staying busy on the farm. Beth takes care of our many chickens, ducks, and turkeys. She enjoys our dogs, church, playing guitar, occasional pickleball, and all things Texas A&M. We both love spending time with family, playing with our grandchildren, and floating the river.

Our favorite part of Derby Farms is visiting with people from all walks of life and making amazing friendships with other vendors!

Kenzie

Hi! I’m Kenzie and I am a 17-year-old junior at La Vernia High School who was born and raised in La Vernia, Texas. Growing up in a small, close-knit community has shaped me into someone who values strong relationships and enjoys spending time with friends and family. In my free time, I love going to the beach, making memories with the people closest to me, and going hunting, where I can enjoy the outdoors and embrace her adventurous side.

Lacy Grisham

Hi, my name is Lacy Grisham. I was born and raised in La Vernia, Texas. I am a junior student-athlete at La Vernia High School, who participates in the LVHS softball program. I also show rabbits in the senior division at the La Vernia livestock show. Outside of these activities, I like to spend time with family and friends, go to the beach, tan, and make money!

Mady Awbrey

Mady Awbrey is a team member at Derby farms Sweets and Treats and is proud to call La Vernia home. She is known for her friendly, creative, and honest personality, which shines through in her interactions with customers. Mady enjoys connecting with people and experimenting with new freeze-dried treats, always looking for fun and unique ways to make each customer’s experience special. She also values the strong sense of community that comes with working at Derby Farms. Outside of work, Mady enjoys reading, photography, and spending time working with children. She is currently working toward becoming an occupational therapist, where she hopes to continue helping others in a meaningful way.

Kinley

Hey yall! I’m Kinley I’m currently doing hair school at Paul Mitchell in San Antonio. I’m scheduled to graduate in the end of July ! in my spare time I enjoy going to 7 Brew, hanging out with friends, and spending time with my boyfriend!
